Vegetarian Tajine

Requirements

  • 1 tbsp vegetable oil
  • 1 medium red onion, diced
  • 2 cloves of garlic, finely chopped
  • ½ teaspoon ground cinnamon
  • A teaspoon of ground cumin
  • ½ teaspoon ground coriander
  • 1 red pepper, diced
  • 2 courgettes, diced
  • 1 medium-sized aubergine, diced
  • 400 grams can of chopped tomatoes
  • 400 grams tin of chickpeas, rinsed and drained
  • 2 tbsp tomato puree
  • 100g dried apricots, cut into quarters
  • 1 tbsp harissa 
  • 300 ml hot vegetable stock
  • 2 cinnamon sticks

Preparation

1. Start the saute function for 8 minutes and allow to warm up.

2. Add the oil to the inner pan along with the onion and garlic and fry for 3-4 minutes, stirring regularly. Stir in the spices and cook for another minute. Stop sautéing now.

3. Add the remaining ingredients, stir well and close the lid. Select the Bean/Chili function with a cooking time of 10 minutes. When the appliance has finished cooking, leave it to cool for 5 minutes. Now release the remaining pressure manually.

4. Remove the lid and stir the contents. Remove the cinnamon sticks.

6. Ladle into warm bowls. Garnish with finely chopped parsley, a dash of yoghurt and serve with couscous.
