Chili Mac & Cheese

Requirements
- 1 cup onions, chopped
- ½ cup red peppers, chopped
- ½ cup green peppers, chopped
- 3 garlic cloves, minced
- 1 pound ground beef or ground turkey
- 2 cups elbow macaroni
- 15 ounces fire roasted tomatoes
- 15 ounces canned black beans
- 15 ounces canned chili beans
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey jack cheese
Homemade Chili Seasoning :
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano, dried or ground
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
Preparation
- Heat a skillet on a medium-high heat. Add ground beef and chili seasoning to the skillet. Break down the ground beef while it cooks. Stir and cook until beef is no longer pink. Drain excess fat if necessary.
- Add red peppers, green peppers, onions, and garlic. Stir until ingredients are lightly cooked.
- Place cooked beef and vegetables into your Slow Cooker. Add beef broth, macaroni, tomatoes, and beans into the slow cooker.
- Cover; cook on LOW for 3 to 3 ½ hours or on HIGH for 1 ½ to 2 hours, until the macaroni is soft. Add cheese to your slow cooker 10-15 minutes prior to serving, allowing it to melt.
- Cool before serving and enjoy!
