Summer Berry Ice Cream

Requirements

  • 200-250ml double cream or natural yoghurt
  • 300g mixed frozen berries
  • 1-2 tbsp icing sugar
  • 1 pack of meringue nests (optional)

Preparation

  • Using a hand blender, add all the ingredients to a large blending jug. Blend until smooth. When using a blender, add cream first and the frozen berries on top, then pulse a few times to distribute the berries, and blend.
  • Spoon into individual meringue nests immediately, or place in the freezer in a covered container until ready. It really is this simple!

Tips:

  • Add more cream if a looser consistency is preferred.
  • Natural yoghurt or soy yoghurt can be in place of double cream, you may need to place in the freezer for 30 minutes after blending to allow to set.
  • The frozen berries freeze the double cream as its being whipped to produce an instant ice cream.
  • Mix and match your frozen fruits for a variety of flavours.
