Shortbread biscuits

Requirements

  • 200g butter (room temperature) cut into cubes
  • 100g fine caster sugar
  • 300g plain flour (sieved)

Preparation

  • Heat the oven to 160C.
  • Line a baking tray with greaseproof paper.
  • Beat butter and sugar until smooth using a hand mixer.
  • Mix in the flour very carefully.
  • Squeeze the dough into a ball with your hands.
  • Roll the dough up to 5mm thick and shape it with a biscuit cutter or cut into your fingers.
  • Place the dough on a baking tray and refrigerate for 15 minutes.
  • Sprinkle each biscuit with a little sugar and bake for 15-20 minutes.
  • Cool on a wire rack.
